Lime Chicken Tostadas

Ingredients
4 cups flour 1/3 cup melted duck fat, or canola oil 1 Tablespoon salt 1 tsp. baking powder 1 1/4 cups warm water 2# boneless chicken thighs 2 cups lime juice 1 shallot, diced 3 cloves garlic, minced 1 small red onion, diced 1 tsp cayenne 1 Tablespoon paprika 2 tsps. cumin 3 Tablespoons salt cilantro and creme fraiche for garnish
Mix flour, fat, salt, baking powder in a medium bowl. Slowly add the
water until pizza dough consistency occurs. It might not be all the
water. Quarter the dough and roll out thin using a cookie cutter to cut
the desired shapes. Brush with olive oil and salt and bake at 400 for 5-6
minutes.
In a large pot, heat 2 Tablepoons EVOO, add thighs and brown on either
side. Add the remainder ingredients and then add enough water to cover
the thigs entirely. Simmer on low for 2 hours. Remove meat and shred
over tostadas. Garnish with creme fraiche and cilantro.
