Ingredients
- 600 grs of tuna fish
- 1 onion
- 1 tomato
- 500 grs of artichok hearts
- 100 grs of Pimientos del piquillo ( spanish red pepper)
- 0,40cl Basque cider ( or regular "brut" cider)
- 0,20cl of vegetables bouillon
- 2 pinches of saffron
- 1
- Salt
- Pepper
- Olive oil

How to make Tuna "Saint jean de Luz"
- peel and slice the onion.
- Cut in strings the pimientos.
- Start to heat some olive oil in a fry pan and put you tuna pieces to fry . Make them crusty upside down and then reserved it.
- in a stew pot heat some olive oil and friend the onions and pimientos with salt and pepper until they get a nice colour.
- Dispose your tuna pieces and the artichock into the pot, cover it with the cider and the vegetables bouillon.
- Add the saffron.
On medium/slow fire for 40 minutes.
*I substitute Potatoes to artichock from the original recipe.
