Ingredients
Pumpkin Cupcakes
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon allspice
1/8 teaspoon nutmeg
2 cups sugar
1 cup vegetable oil
3 eggs
2 teaspoons vanilla
4 cups shredded fresh pumpkin
4 ounces white chocolate, chopped
2 oz of white chocolate shavings
these are actually stupid simple pumpkin cupcakes with a mascarpone/cream cheese frosting (pink due to some food coloring) and white chocolate shavings to make them look "fluffy". they're fun to eat because sometimes you just want to be a kid and get your face and hads all dirty with frosting. they go great with tea which is what we did.
- Cut open pumpkin, take out the seeds and inner flesh, then chop into chunks. Grate the pumpkin chunks, skin and all, with a box grated or food processor until you have four cups of grated flesh.
- Measure the flour, baking soda, baking powder, salt, cinnamon, allspice, and nutmeg into a medium sized bowl and whisk to combine.
- Measure the sugar, oil, eggs, and vanilla into a large size bowl and stir to combine.
- Add about a fourth of the dry mixture to the wet and stir to combine. Continue adding in fourths until all the dry is incorporated. The result with be a very thick batter (and a sore arm).
- Fold in the pumpkin and chocolate chunks into the batter and scoop into cupcake papers about 2/3s full.
- Bake at 350 degrees for about 25-30 minutes or until a cake tester comes out clean.
Frosting: 3 ounces cream cheese, room temperature 6 Tb (3/4 stick) unsalted butter, room temperature 1/3 cup mascarpone cheese,cold 3 Tb honey pink food coloring
mix like hell. refrigerate a bit
cover cooled cupcakes in this stuff and refrigerate. then sprinkle chocolate shavings. Drive really fast to your friend;s loft so they dont get all melted and call the skanks over for an old fashioned teaparty. oh- the -fun
