Ingredients
for the cake: * 2 cups all-purpose flour, stirred before measuring * 1 tablespoon baking powder * 1 teaspoon salt * 1/2 cup butter, softened * 1 1/4 cups sugar * 2 eggs * 3/4 cup milk * 1 teaspoon vanilla *some chopped walnuts *sliced toasted almonds
filling : dolce de leche
organic bottled apricots in light syrup (chop them)
frosting:3 cups confectioners' sugar 1 cup butter 1 teaspoon vanilla extract 1 to 2 tablespoons whipping cream
I made this a few weeks ago for a friend , i think it'll be a while before i post another recipe because im not in much of a cooking or eating mood at the present.Dunno when it'll be back, but for now its gone. This is my take on an argentinian cake , i had all these fresh fruit and decided to top the cake with it. (glaze them for pretty glow)
for cake: Mix flour, baking powder, and salt; set aside. Cream sugar and butter in a large mixing bowl, beating until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Add half of the flour mixture then half of the milk.Add vanilla Mix until blended; add remaining. flour and milk and beat until smooth add walnuts. Fill 2 greased and floured layer cake pans Bake at 375° for 25 to 35 minutes, or until cake springs back when lightly touched near center.
frosting:In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
now assembling
Put the bottom half of one layer on a cake plate, cut side up, and spread about dolce de leche ,apricots and some frosting. Top with the top of that layer, Repeat with next 3 layers Add top layer. Coat sides with a thin layer of frosting, just to cover gaps and hold crumbs in place. Frost top completely, then sides. Place sliced toasted almonds on sides of the cake and top with nice fresh fruit. (glazed with simple syrup)
