Peanut ginger chicken

Ingredients

  • 3 tablespoons of peanut butter
  • 2 tablespoons of soy sauce
  • 2 tablespoons of vinegar
  • 2 tablespoons of brown sugar
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • A part of ginger, chopped and minced. (Alternatively, you can use pre-prepared minced ginger, about 2 tablespoons of that.)
  • 1/2 lb of chicken breast or 2 chicken breasts, cubed.
  • Salt and pepper
  • Water
  • Parsley flakes or fresh parsley

How to make Peanut ginger chicken


Easy recipe that can be done in minutes... seriously.

  1. In a bowl, prepare the peanut butter sauce. Add the peanut butter, soy sauce, vinegar, brown sugar and olive oil together to get a nice paste.
  2. In the pan, heat it up with some olive oil and fry the chicken with the ginger and the garlic. Continue until the garlic is cooked.
  3. Add the sauce and stir it around till it is coated all over the place. Add about 1/4 of water and mix. Cover it on low heat for 5 minutes, covered. To keep it saucy, keep adding some water. Add salt and pepper to your liking.
  4. Remove from heat once cooked, add on top of rice and sprinkle some parsley on there.

    I just made this for dinner! You're right, it is pretty quick. I forgot to add in the ginger while cooking but i sprinkled some on top afterwards (sorry, no real ginger here), and i also added another tablespoon of peanut butter to the sauce. chunky peanut butter goes really great! Thanks for the awesome recipe!

    Thankyou jaylene for a great recipie!!! I made it for my wife and I, it was a hit! This will definately be a weekly dish :) Oh, I added capsicum (peppers) and shallots as I felt guilty for not using any vegetables. Thanks again.

    i tried this recipe again tonight (just couldn't get enough of it) and i figured out a better way to mix the peanut butter sauce: sugar first, then peanut butter, and then the olive oil to 'dissolve' the peanut butter. then add the vinegar and soy sauce and you're good to go. the sauce didn't mix that well last night so it was bothering me. thanks for the recipe! it was just as delicious the second time around. :D

    I don't mean to bastardize your recipe, but I threw in a tablespoon of red curry paste while simmering the dish on low—and I'm pretty sure I'm going to make this again for dinner tonight! Too easy, and very tasty! Thanks

    this is a great recipe that's easy to build off of! i doctored mine up with red onion, yellow bell peppers, fried tofu, and a few curry leaves (adds a little depth to the peanut flavor). thanks for posting!

    I really liked this! I added julienned red bell pepper and some spinach leaves (to wilt) and then added chopped roasted peanuts on top to finish it. Thanks for the recipe!

    This was good! My 4 year old ate it up! I added zucchini, mushrooms, and bean sprouts. Used ginger juice instead as we're very rural and can't usually get fresh ginger at our store. Thank you - the sauce was divine!
