Kat's Couscous Salad

Ingredients

Cook and chill 1 box of plain couscous (the 5 minute kind).
Chop up one Granny Smith Apple into bite-sized chunks.
Chop up 1/4 bunch of fresh cilantro (about 1/2 - 1 cup chopped).
1/2 cup of chopped walnuts.
1 cup of dried cranberries.
1-2 Tablespoons curry powder (depending on your taste for spicy stuff).
1 cup greek yogurt, plain yogurt, or buttermilk (based on availability).

How to make Kat's Couscous Salad


Toss all dry ingredients together. 
Stir in 1 cup of greek yogurt, plain yogurt, or buttermilk. (The salad is too dry without it). 

It's a tasty salad because the sweet/tart of the apples and cranberries blends well with the savory/spicy of the curry, walnuts and cilantro. The couscous is a nice starchy base for it all, and the yogurt or buttermilk is a nice creamy element.
