yuukakuwe use miso pickled garlic as the filling in ours. they are also rather simple to make with out a mold :) other good things for the outside besides nori seaweed , or sesame seeds is miso. for lots of variety, furikake is good i especially like benito types. when making sweet onigiri i don't use vinegar, and a little bit extra sugar and fill it with sweet red bean paste. itadakimasu!

iconsamNice! This sounds a lot like a J.Oliver dish I make a lot, but instead of chicken, use a nice salmon fillet.
