Simple Onigiri

Ingredients
- Rice (japanese)
- Smoked salmon
- Nori (seaweed)
- Sesame seeds
I love onigiri.
My first trip to Japan more than four years ago afforded me many cultural insights and an incredible window in to a wonderful and mysterious world. But mainly involved me dashing from convenience store to convenience store stuffing my mouth with exotic treats whilst exclaiming: "OMG JAPAN IS SO AWSUM AND CRAZY! I AM SO EATING SEAWEED RIGHT NOW!!!1 SEAWEED!!"
Whilst the novelty of seaweed has worn off, my enthusiasm for onigiri remains, even more so now that they are widely available here in London
I am sure my version butchers thousands of years of delicate innovation in Japanese cuisine, but here is my stab at a nice healthy snack to take in to work.
- Bung some rice in the old cooker.
- I think freshly cooked rice is the best; use water to keep your fingers wet.
- Put a bit of rice into an onigiri mold - you should be able to pick one up for about a quid (you can get round ones and triangular ones).
- Stick a filling in the middle - I used smoked salmon, but I've also done tuna with a bit of mayo and a little spice.
- Bit more rice on top and press with the mold.
- Wrap or decorate with nori, furkikake, sesame seeds or whatever tickles your fancy.

yuukaku sayswe use miso pickled garlic as the filling in ours. they are also rather simple to make with out a mold :) other good things for the outside besides nori seaweed , or sesame seeds is miso. for lots of variety, furikake is good i especially like benito types. when making sweet onigiri i don't use vinegar, and a little bit extra sugar and fill it with sweet red bean paste. itadakimasu!

If you wanna kick this up a notch, you should make the rice into sushi rice with rice vinegar and some sugar. :) Awesome photo btw.
