Skillet Scramble with Garlic and Kale

Ingredients

  • 1/3 bag of Potatoes O'Brien (with onions and peppers)
  • 1 Tbs Olive Oil
  • 4 eggs, whipped
  • 1 big clove garlic chopped
  • 1/2 shallot chopped
  • 1 fresh Kale bunch
  • A pinch of seasoned salt, sea salt, and pepper.
  • Any cheese you would like to garnish with will add flavor (I used Swiss)

How to make Skillet Scramble with Garlic and Kale


  1. In a med. saucepan, heat 1 Tbs olive oil at med-high heat and lightly cooked the garlic and shallot before adding the chopped kale.  Then cover, and lower heat.
  2. In a 7 inch skillet, heat 1 Tbs olive oil at med-high heat.  Add the potatoes, season to taste, and cook until lightly browned.  
  3. Move the potatoes aside, and pour the eggs. Scramble, but before the eggs are fully cooked, mix together the potatoes and cooked kale.  
  4. Lay a slice of cheese on top and serve.  Toast is also highly recommended. :)
