Oatmeal Craisin Cookies

Ingredients
- 4 ounces unsalted butter, soft
- 1 1/2 cups white sugar
- 3/4 cup brown sugar
- 3 each whole eggs, at room temperature
- 1 teaspoon vanilla extract
- 4 1/2 cups rolled oats
- 1 1/2 cup unbleached all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon kosher salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 1/2 cups dried cranberries (or raisins)
- 1 cup walnuts, toasted and coarsely chopped
- 1/2 cup shredded coconut
- Cream butter and sugars on high speed until light and fluffy.
- Scrape bowl and beater and gradually add eggs and vanilla, beating well after each addition until mixture is velvety.
- In a separate bowl, combine oats, flour, soda, salt, and spices.
- Stir in dry ingredients until just combined. You may wish to do the last couple of stirs by hand to avoid overmixing.
- Fold in craisins, walnuts and coconut.
- Chill dough at least 1 hour before baking.
- Drop or roll into spheres and bake at 350ºF (325ºF in convection ovens) until edges are golden.

I'm so glad someone else makes cookies like this! I use an equal amount of raisins and dried tart cherries. One of my favorite cookies. :)
