Ingredients
- 4 ounces unsweetened chocolate
- 6 ounces unsalted butter
- 2 cups white sugar
- 3 each whole eggs
- 1 teaspoon vanilla extract
- 1 cup unbleached all-purpose flour
- 1 cup peanuts, roasted and (well) salted
Inspired by a certain shortbread cookie at a certain local bakery, I have been adding peanuts to just about everything lately. Behold, a very simple, chocolatey brownie, dressed up with the unlikely but delicious peanut. Mine are looking a tad underdone, but no less tasty.
- Preheat oven to 350ºF. Grease and flour your pan.
- Melt chocolate and butter together. You may do this in the microwave or over a double boiler.
- Stir the sugar into the smooth butter/chocolate mixture.
- Beat in eggs and vanilla.
- Stir in flour until just combined.
- Fold in nuts.
- Bake until done, maybe 40 minutes.
- Cool; turn out; cut.
