Baked Stuffed Manicotti

Ingredients

  • 1 boneless chicken breast
  • 1 cup of manicotti
  • A handful of spinach
  • 1/2 cup of marinara sauce
  • 1/2 cup of ricotta cheese
  • A dash of shredded mozzarella cheese
  • Some salt and pepper. Other seasonings if desired.
  1. Season and saute the chicken until thoroughly cooked. Chop coarsely when somewhat cooled.
  2. Boil the pasta until slightly undercooked. Rinse in cold water.
  3. Fill manicotti with ricotta cheese using a piping bag (or a storage bag with the corner clipped off.
  4. Combine chicken, manicotti, spinach and marinara sauce in a baking dish. Garnish with mozzarella cheese.
  5. Bake at 350°F for about 10 minutes or until spinach is cooked and cheese is melted.
