Baked Stuffed Manicotti

Ingredients
- 1 boneless chicken breast
- 1 cup of manicotti
- A handful of spinach
- 1/2 cup of marinara sauce
- 1/2 cup of ricotta cheese
- A dash of shredded mozzarella cheese
- Some salt and pepper. Other seasonings if desired.
- Season and saute the chicken until thoroughly cooked. Chop coarsely when somewhat cooled.
- Boil the pasta until slightly undercooked. Rinse in cold water.
- Fill manicotti with ricotta cheese using a piping bag (or a storage bag with the corner clipped off.
- Combine chicken, manicotti, spinach and marinara sauce in a baking dish. Garnish with mozzarella cheese.
- Bake at 350°F for about 10 minutes or until spinach is cooked and cheese is melted.
