Ingredients
makes 16 pieces- 45 oz sushi rice
- 8 rectangle or 16 square ABURA-AGE (deep-fried tofu)
- 1 2/3 U.S cups dashi
- 4 TBS suger
- 4 TBS soy sauce
- 1 TBS mirin
- Cut deep-fried tofu rectangle to square. Carefully open up tofu from cut side to make pouches.
- parboil to remove excess oil, drain, and pat dry.
- Combine sauce ingredients in a pot, bring to a boil.
- Add deep-fried tofu, cover with a drop-rid, and simmer over midium heat for 20 minutes. let stand to cool.
- Squeeze out tofu pouches lightly, and stuff with sushi rice. Fold edges of pouch over rice.
