    Thank you for your comment, but in fact, I disagree about high sugar content. The dough contains only little sugar, but the cookies gets "healthy sweetness" because of pears. And fruits are healthy, right?

    Yes, you are right. Potato starch is of course used as thickening agent, so corn starch might be used as well.

    Can I use corn starch instead of potato starch? It's just used for thickening purposes right?
