Spicy chicken rice noodles

Ingredients

  • 200 grams of broad rice noodles
  • 2 zucchinis, sliced lengthwise
  • 5 white asparagus, peeled, hard ends trimmed, steamed 5 minutes
  • 5 napa cabbage leaves
  • 2 chicken breasts, sliced finely
  • 1 stalk of spring onion, sliced
  • 2 tablespoons of garlic & chili chinese paste
  • 1/2 cup of chicken broth
  • 2 teaspoons of potato starch
  • 1 tablespoon of light soy sauce
  • 1 tablespoon of sake
  • teaspoon of grated ginger
  • 3 tablespoons of oil
  • coriander
  • black sesame seeds

How to make Spicy chicken rice noodles


  1. Marinate meat in sake and soy sauce.
  2. Cook rice noodles according to directions on the package.
  3. Heat 1 tablespoon of oil, fry ginger 30 seconds, add chicken, fry 4-5 minutes till done. Remove from wok.
  4. Heat 1 tablespoon of oil, fry zucchini about 3 minutes. Remove from wok.
  5. Heat 1 tablespoon of oil and fry napa cabbage and asparagus about 2 minutes.
  6. Return zucchini and chicken to wok, add noodles.
  7. Mix broth with garlic & chili paste, add potato starch, mix well, pour into wok.
  8. Mix well, heat till sauce thickens.
  9. Serve sprinkles with spring onion, sesame seeds and coriander.
