Spicy chicken rice noodles Recipe

Ingredients
- 200 grams of broad rice noodles
- 2 zucchinis, sliced lengthwise
- 5 white asparagus, peeled, hard ends trimmed, steamed 5 minutes
- 5 napa cabbage leaves
- 2 chicken breasts, sliced finely
- 1 stalk of spring onion, sliced
- 2 tablespoons of garlic & chili chinese paste
- 1/2 cup of chicken broth
- 2 teaspoons of potato starch
- 1 tablespoon of light soy sauce
- 1 tablespoon of sake
- teaspoon of grated ginger
- 3 tablespoons of oil
- coriander
- black sesame seeds

How to make Spicy chicken rice noodles
- Marinate meat in sake and soy sauce.
- Cook rice noodles according to directions on the package.
- Heat 1 tablespoon of oil, fry ginger 30 seconds, add chicken, fry 4-5 minutes till done. Remove from wok.
- Heat 1 tablespoon of oil, fry zucchini about 3 minutes. Remove from wok.
- Heat 1 tablespoon of oil and fry napa cabbage and asparagus about 2 minutes.
- Return zucchini and chicken to wok, add noodles.
- Mix broth with garlic & chili paste, add potato starch, mix well, pour into wok.
- Mix well, heat till sauce thickens.
- Serve sprinkles with spring onion, sesame seeds and coriander.
