Mum's Apple & Sultanas Pie Recipe

Ingredients
For the Pastry...
540g self-raising flour
360g unsalted butter
175g sugar
2 eggs
pinch of salt
For the Filling...
5 green apples, peeled and cut into chunks
120g sultanas
100ml calvados liquor or galliano liquor
1 tsp mixed spice
1/2tsp ground cloves
3 tbsp brown sugar
50g unsalted butter
8 or 100g walnuts crushed with hands
How to make Mum's Apple & Sultanas Pie
For the Pastry...
- Cream the eggs & sugar in a food processor. (Do not over soften)
- Add the soft butter and mix for a few seconds.
- Gradually incorporate the sieved flour & salt.
- Mix until smooth (Lightly & not over worked).
- Allow to rest before use.
For the Filling...
- Soak the sultanas in a small bowl with the calvados liquor.
- Melt the butter in a saute' pan.
- Add the chopped apple chunks and fry for 2-3 mins.
- Add the mixed spice, ground cloves and brown sugar to the apples and mix.
- Cook for further 3 mins and then add the soaked sultanas & the calvados liquor.
- Leave to cook and reduce the liquor for 3 mins.
- Set aside to cool down.
- Open the pastry with a rolling pin to the dish you are using, I used the round fluted tart tin
- Add the apple & sultanas filling a spread the mixture evenly.
- Add the walnuts and cover with another layer of pastry.
- Pierce the top pastry with a knife or fork and brush with some milk.
- Bake in a hot oven 175°C for 20-25 mins.
- To serve sprinkle some icing sugar on top.
