Roasting Garlic is both aromatic and wonderful in sauces and mashed potatoes.
Step 1 Cut the top 1/3 off the garlic head - the goal is to expose all of the cloves of garlic.
Step 2 Place the head of garlic onto a square sheet of aluminum foil and draw the edges up towards the garlic head. You want to make a little bowl shape.
Step 3 Drizzle with olive oil and a dash of kosher salt and fresh cracked pepper.
Step 4 Bake in a 350 Degree oven for 30-45 minutes.
Step 5 Allow to cool and squeeze the cloves into a mortal and pestle and pound until it forms a smooth paste.
You can now add it to your wine sauces or mashed potatoes. It is really good spread on just plain toasted bread.
