    The dressing lends a salty, sour, sweet, garlicky and spicy flavor to this dish...the fishiness of the fish sauce is an added bonus. :) If you absolutely cannot get fish sauce, then you can substitute with sea salt. In fact, many of the restaurants put very little fish sauce and compensate with salt to lesson the fishy smell for the Western palette. Cheers!
