Ingredients
3 shredded carrots2 cups shredded cabbage
egg roll wrappers
2 tsp curry powder
1 tbs soy light sauce
2 green onions
1 tsp sriracha
1 tsp chili garlic paste
1/2 tbs fresh lime juice
1/2 tsp ginger powder
oil for frying

How to make Curry Egg Rolls
This is a flavorful eggs roll recipe that is sure to impress. As always, feel free to add more veggies. I usually just use whatever I have in my fridge at the time.
In a large bowl, combine vegetables and seasonings. Let sit for about 20 minutes so that the flavors can develop and sink in.
Then, place about 2-3 tbs of filling onto egg roll wrappers and fold as directed by package.
Fry in batches of 2-4 (depending on the size of your pot) in hot oil. For a healthier version, brush with oil and bake at 425 degrees until golden brown on both sides.
