Ingredients
2 Packages Lady Fingers14 oz Mascarpone Cheese
3 Eggs, divided
4 Tbsps Sugar (or confectioner's sugar)
2 Cups strong Coffee (plus splash of coffee liqueur)
Bitter Cocoa Powder for sprinkling
- While gradually adding sugar, beat egg yolks until pale in color. Add Mascarpone Cheese and mix gently until smooth.
- In a separate bowl, beat egg whites with a wire whisk or electric beater until thick and gently place them into the Mascarpone Cheese mixture.
- Dip Lady Fingers quickly into the coffee one at a time and arrange them in a rectangular serving dish.
- Cover Lady Fingers with this cream mixture (use all ingredients to make more layers) Sprinkle the top with bitter cocoa powder.
- Refrigerate for at least one hour before serving. If leaving stand overnight, cover with plastic wrap or lid to prevent the top from drying out.
