- 1/2 white onion, sliced
- splash white wine
- 2 slices bread
- 2 eggs
- 1 tbsp butter

How to make Chanterelle al la Grecque

My version is very similar but uses butter and no garlic. When my chanterelle supply runs out, I plan to try this with other mushroom types.
The white wine really sets it apart. Great with soup or salad.
Recipe is for 2 people.
Cook onion and mushrooms in butter.
When brown, add splash of white wine.
Fry 2 eggs.
When most of the wine has evaporated, put mushroom and onion mixture onto toasted bread.
Put fried eggs on top.
Serve and enjoy.
