  • 1/2 white onion, sliced
  • splash white wine
  • 2 slices bread
  • 2 eggs
  • 1 tbsp butter

How to make Chanterelle al la Grecque

My version is very similar but uses butter and no garlic. When my chanterelle supply runs out, I plan to try this with other mushroom types.

The white wine really sets it apart. Great with soup or salad.

Recipe is for 2 people.

  1. Cook onion and mushrooms in butter.

  2. When brown, add splash of white wine.

  3. Fry 2 eggs.

  4. When most of the wine has evaporated, put mushroom and onion mixture onto toasted bread.

  5. Put fried eggs on top.

  6. Serve and enjoy.
