Ingredients
- 1 cup chopped carrot
- 1 cup chopped celery
- 1 cup chopped potato
- 1 chopped onion
- olive oil
- 6 - 8 cups stock
- 2 cups pureed pumpkin
- thyme
- parley
- 2 crushed garlic cloves
- 1 tbsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp coriander
- salt and black pepper

How to make Curry Pumpkin Soup
I was looking for something to make with pumpkin and decided to try this soup.
You can make it as spicy as you like. The potatoes give the soup body and the seasonings give it flavor.
I used canned pumpkin but I'm sure it would be better with home roasted or boiled pumpkin.
Cook carrot, celery, potato and onion in olive oil.
When celery and onions seem clear, add garlic and thyme. Cook for a minute or two longer.
Add pumpkin and remaining seasonings except for parsley.
Add stock.
Cook until vegetables are soft.
Towards end of cooking add parsley.
Cool soup and puree.
Serve with parmasean cheese and croutons.
