How to make St Joseph Cakes - Sfinge de San Giuseppe
Beat together eggs and ricotta. Add sugar and amaretto, then carefully blend in flour. Add cinnamon to taste. Drop about 1/4 cup per doughnut into a deep hot oil to fry, about 4 at a time. Turn after a minute or so when lightly browned. Allow to cook about 3 minutes total, and remove from oil before they get too dark. Drain on paper towels and roll in powdered sugar. Serve with whipped cream, or fruit or plain.
