Kimchee Fried Rice with Egg on Top

Ingredients
- some vegetable oil
- 2/3 bowl diced kimchee
- 1 tablespoon soy sauce
- 1/2 tablespoon hot pepper paste
- 1 bowl cooked rice, preferably left-over
- 2/3 bowl diced spam/canned tuna/bacon etc..
- 1 egg
- little bit of crumbled up nori
By bowl, I mean those little japanese rice bowls
- marinate diced kimchee with the hot pepper paste and soy sauce.
- on pan, over high heat, pour a bit of oil. How much depends on your preference (but I would say about 2 tablespoons)
- before the pan gets too hot, dump marinated kimchee and spam (or anything extra) on to pan and sautee..don't let it burn.
- dump in rice.... fry until all individual rice grains are approximately the color of rice grains from the picture up there.
- fry eggs..I cook it sunny side up.
- plate your fried rice and let your egg sit on top of it.
- sprinkle some nori on top.
This portion is for one person.
Tip:
- You don't want mushy fried rice...so I would say fry the rice until it gets slightly burnt...and toasty :)
- If it doesn't taste seasoned enough, maybe add some black pepper. Makes a difference to regular fried rice :)

JordanC saysTo be picky, the egg looks over-seasoned. Most places like Ramsays don't season them too much because a well-cooked lovely white egg just looks spectacular on it's own.

chun44u sayshaha really? interesting...i just think nori makes the kimchee fried rice dish taste better..especially the toasted crumpled up nori. hmm well then again with really tasty kimchee you shouldn't be seasoning at all, just fry with kimchee. Then again, it's so hard to get really tasty kimchee in the States.

rasterboy saystotally agree on it being hard to find good kimchi in the states. i actually think the black of the nori adds nice contrast to the white and yellow of the egg on top.
