Ajo Blanco (Cold Garlic and Almond Soup)

Ingredients

  • 50g peeled unsalted untoasted Almonds
  • 1 garlic clove
  • 1/2 cup of olice oil
  • 1/4 cup white wine vinegar
  • 1/2 Baguette
  • salt
  • 2-3 cups cold water
  • white grapes (for garnish)
And yet another cold soup, this time pretty heavy on calories because of the large amount of almonds. Nevertheless a very tasty refreshing summer dish from the South of Spain. It is also called White Gazpacho.

  • Put all the ingredients except the grapes into blender
  • Process until liquid
  • Add salt to taste
  • garnish with white grapes
  • serve ice cold
