Ajo Blanco (Cold Garlic and Almond Soup)

Ingredients
- 50g peeled unsalted untoasted Almonds
- 1 garlic clove
- 1/2 cup of olice oil
- 1/4 cup white wine vinegar
- 1/2 Baguette
- salt
- 2-3 cups cold water
- white grapes (for garnish)
And yet another cold soup, this time pretty heavy on calories because of the large amount of almonds. Nevertheless a very tasty refreshing summer dish from the South of Spain. It is also called White Gazpacho.
- Put all the ingredients except the grapes into blender
- Process until liquid
- Add salt to taste
- garnish with white grapes
- serve ice cold
