Ingredients
- half a kilo (1 pound) minced beef
- 1 egg
- 1 small onion
- half a kilo (1 pound) of ripe tomatoes
- 2 stock cubes (Oxo, Maggi or the like, try my selfmade stock concentrate :) )
- olive oil
- half a cup of red wine
- black pepper

How to make Albondigas (Spanish Meat Balls)
This is another typical tapa dish. Everybody does it a different way. So this is only my variation.
- Very finely chop up the onion
- mix the minced meat with the egg and half of the chopped onion and season with the stock cube and black pepper
- add a generous serving of olive oil into a pot, heat it up
- make little meat balls of about ping pong ball size and add them to the oil.
- fry until almost done then add the rest of the onion and fry together with the meatballs for another couple of minutes.
- peel the tomatoes and finely chop them up, add them to the meatballs.
- add the red wine the other stock cube and some black pepper to season
- let everything simmer for another 15 minutes
