Gazpacho (Andalusian Cold Tomato Soup)

Ingredients
- 3 large tomatoes
- 1 small cucumber
- 1/2 green pepper
- 1 garlic clove
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- white baguette style bread(as much as 1 small roll)
- salt
- cumin
- 2 cups of cold water
Gazpacho is an ideal dish for hot summer days and plays an essential part in Andalusian cuisine.
- Peel cucumber
- Cut up the tomatoes, cucumber, pepper and garlic
- Put all vegetables with water, oil and vinegar into blender, process until totally liquid
- Add cumin and salt to taste
- put into fridge until very cold
- if you want, garnish with finely chopped green pepper, tomato, bread and onion

I make this (with this recipe) every time me or any of my flat mates get a wisdom tooth removed, or have to be on a liquid diet for some other reason. Sometimes I put something extra in it (celery, beans or other veggies), sometimes I leave something out. But never without bread, cumin or white wine vinegar! Thanks for a great recipe!
