How to make Quick Bolognese style sauce
I don´t pretend to do an authentic Bolognese sauce (ragù alla bolognese). It is just my variation and it takes much less time than the original.
- Chop the onion and crush the garlic
- Chop the optional pepper
- Add olive oil to a pan and heat it up
- Add the onion, garlic and pepper to the pan
- Let the onions get a golden color
- Then add the minced meat and 1 tablespoon of oregano
- Season with salt and pepper
- Let it cook for 10 minutes
- Then add the tomato out of the can
- Cook for another 15 minutes
- Add about 2 tablespoons of cream or 1/4 cup of milk to dampen the sourness of the tomato
- Serve on top of any pasta, I prefer Tagliatelle
- Sprinkle some cheese on top

Then you should not call it Bolognese, maybe just Ragout (Ragù), Bolognese is just one of the tousands variations of ragout. Actually considering your ingredients list it is a ragout southern style. Too much garlic and oregano for Bologna. If I can there is one technical mistake: onion should not get colored, a strong heat would seal the vessels and forbit the juices to be released into the sauce. Besides I find iteresting the use of milk to reduce tomato acidity, but try this recipe with more milk (1/2 cup) and no tomato.
