Quick Prawn and Bamboo Curry

Ingredients
- 250 g cooked and peeled prawns
- 1 can coconut milk
- 1 green pepper
- 1 tablespoon green curry paste
- 1/2 can of bamboo shoots
- 1 tablespoon peanut butter
- 1 onion
- fresh ginger
- Basmati rice
- salt and pepper
- olive oil
- chop up the onion and the pepper
- put some oil into a pot and shallow fry the onion and pepper
- chop up some ginger and add it to the pot
- add the prawns and the bamboo shoots
- add the curry paste, peanut butter and coconut milk
- simmer it for some minutes
- season to taste with salt and pepper and serve with Basmati rice
