Salmon and Potato Gratin

Ingredients
- 200 g smoked salmon
- 1/2 kilo of potatoes
- 250 g Brussels sprouts
- 1 cup of milk
- 1/4 cup of butter
- 1/4 cup of white wheat flour
- 1 cup of shredded cheese (Emmentaler, Gruyère or others)
- salt and pepper
- nutmeg
This Gratin can have pretty much any ingredient as you wish as long as it has Béchamel or Mornay sauce and Potatoes
- boil and peel the potatoes
- boil the Brussel sprouts
- for the Béchamel make a blond roux heating up the butter in a pan and adding the flour
- add the milk to the roux mowing it constantly with a whisk so it does not stick
- season with nutmeg and salt and pepper
- if you wish, add some of the grated cheese to the Béchamel sauce so it is a Mornay sauce now
- cut the potatoes and the Brussel sprouts in slices
- add layers of potatoes, sprouts, salmon and sauce into an oven proof dish
- repeat adding layers until you have used all the ingredients
- sprinkle the rest of the grated cheese on top
- put the dish into a preheated oven at about 200 °C for 20 minutes, check on it so it does not burn
