Ingredients
- 200g German style sausage, use good quality frankfurters or French cervelas (Lyoner) or Ring Bologna or German Fleischwurst
- 50g Swiss or German Emmental cheese
- 5-6 pickled gherkins (German or Polish variety is best)
- 1 small onion
- olive oil
- vinegar
- salt
- pepper
- parsley
This a variation of German Wurst salad, the only difference is th addition of Swiss Cheese.
- finely chop up the sausage, cheese, gherkins and the onion
- put it all into a bowl
- add some of the liquid of the pickled gherkins, olive oil, a little vinegar, very little salt, pepper and parsley
- move it all and serve cold, preferably with some German rye bread
