Ingredients
- 250 gr butter
- 250 gr sugar
- 500 gr plain chocolate (a bar)
- 8 eggs
- 230 gr superfine flour
- 1 vanilla sugar bag
- 1 yeast powder bag
- 400 gr apricot jam

How to make Sacher Torte
- Mix butter and sugar well in a bowl until it become like a cream.
- Melt 250 gr plain chocolate in a bain-marie.
- Blend the chocolate into the mixture.
- Separate the white and the yolk of eggs.
- Add the yolks into the mixture.
- Give the flour a sieve, mix with yeast powder and blend it into the composite.
- Whisk the egg whites until stiff and stir it slowly into the mixture.
- Mix the ingredients well.
- Ladle the composite into a cake tin greased (about 25-28 cm in diameter).
- Put it in an oven (180 °C - 50 min).
- Let it cool down and bisect it carefully in two discs.
- Spread the apricot jam onto a disc.
- Reassemble delicately the discs of the cake.
- Melt the rest of the plain chocolate (250 gr) in a bain-marie.
- Spread the cake with the liquid chocolate well.
- Let it cool down and... eat it! :-)
