Sardinian Onion Soup

Ingredients

Ingredients for 4 person

  • 500 gr onions
  • 100 gr lard
  • 100 gr durum wheat semolina
  • 200 gr old dry bread
  • 200 gr sheep's milk cheese
  • salt and pepper

 

How to make Sardinian Onion Soup


Cut onions into regular pieces and fry with lard. Slowly add the durum wheat semolina. Pour warm water into a mirepoix and stir well impeding the shaping of lamps. Add salt and pepper. Cook for 10 minutes about. Put a layer of slices of bread toasted with sheep's milk cheese into a soup tureen toasted. Pour the boil soup.
