- 4 oz. sifted all purpose flour
- 4 eggs
- 3.5 oz. caster sugar
- 3 tbsp. melted butter

How to make Easy Sponge Cake
- Wisk eggs on high until frothy. I used a hand held mixer for this. Add in sugar gradually until well incorporated. Whisk until light in color and fluffy. Continue mixing in low speed until mixture is smooth.
- Divide flour into 3 portions and sift over the egg mixture, carefully folding with a spatula after each addition. Having a few streaks of flour visible on the mix wont be a big deal. Just DON'T over mix it.
- Drizzle the butter in the mix and fold it stirring in one direction.
- Pour batter into a lined and greased baking pan and bake in a pre heated oven at around 350 F for about 30 - 35 minutes.
- Let it cool a bit after baking. Top with icing of your choice or just dust with powdered sugar to finish it.
