Ingredients
- Enough Penne or Fussili pasta for 1 person
- 4 - 6 grape tomatoes (or cherry tomatoes)
- Some fresh basil leaves
- 5 black olives
- A handful of mixed lettuce
- 2 tspn capers
- 1 tbspn olive oil
- 1 tbspn pasta water
- Some crushed red peppers
- Freshly grated parmesan cheese
- Salt & Pepper

How to make Diet Pasta Salad
Okay so I'm on diet and it sucks because I've been depriving myself of pasta. Bad times. Well, I've come up with a light & healthy pasta salad that you guys can try if u need to lose a few pounds and not give up pasta meheh.
- Fill a pot with water, throw in some salt and cook the pasta til al dente. Basic stuff I'm sure everyone knows, oui?
- While waiting for the pasta, slice the tomatoes and olives in half. Of course you can eat them whole if you like but I like to fool myself into thinking that I'm eating a lot more than I actually am ;D
- Strip the basil leaves from the stalk and chop em up too!
- Once the pasta's cooked, you can drain the water but do remember to leave a tablespoon or so of the remaining pasta water for the salad!
- Dump the pasta in a bowl and throw in them sliced tomatoes, olives, basil leaves and capers.
- Pour in the olive oil and pasta water.
- Season with the crushed red peppers and the salt & pepper.
- TOSS!
- Grate lots and lots of some parmesan cheese on top and serve. Good times.
(If you can, try not to use ready-made grated parmesan they sell in packets or bottles at the supermarket, grating it fresh from the block of cheese really makes a big difference.)
Oh and before I end this recipe, I would like to bitch about how bloody expensive capers are in my country. 10 fricking bucks for a really tiny bottle! asldkskflsfgjdgjgkdf;lg
