How to make Barbarian Hummus
- Drain chick peas, reserving 2 tablespoons of liquid.
- Roast garlic cloves in a little olive oil, until lightly browned. The more roasting, the sweeter the cloves, so take care if you prefer a more classic "garlic flavor."
- Place chick pea liquid, garlic cloves, red peppers, olive oil, lemon juice, tahini, and cumin into a food processor or blender and process until combined.
- Add chick peas, and process until nearly smooth.
- Taste. Add salt, lime juice, and paprika as you prefer.

This title comes from a friend of mine, whose wife is Lebanese. I send him a recipe for my hummus to which I had added a chipotle pepper (excellent variation as well), and he replied that he would try my barbarian hummus. Well, this recipe is another variant.
