Ingredients
- 1 serving soba noodles
- 2 Tbsp soy sauce
- 2 Tbsp Mirin
- 2 Tbsp sugar
- 2 cups dashi
- 8 oz. boneless skinless chicken thigh
- 1/2 package sansai (mountain vegetables)
- whatever vegetables you have handy
- 1 block of mochi
- 1 hard or soft boiled egg, or 1 raw uzura
- a piece of lemon zest (dime sized)

How to make Sansai Soba
Cut the chicken into bite-sized pieces. In a medium saucepan, heat up the dashi to a nice simmer and add the sugar, mirin and soy sauce...in that order. When you have your broth to a light simmer, add the chicken.
Heat up the broiler and toast your mochi. Cut the block into about 4 pieces. You have to watch mochi because it will burn easily. They will puff up when they toast, adding a nice texture to the dish.
Meanwhile, if you have any vegetables other than the sansai, you can blanch them for a couple minutes, then set aside. In another pot, boil the soba. The chicken should be done in the time that it takes to cook the soba.
Now that your ingredients are ready, it's time to assemble. Grab a nice big bowl and put the zest in the bottom. Add the broth with chicken. Lastly, add the soba noodles and arrange your vegetables, mochi and egg on the top. Enjoy!
*uzura is quail egg
*when adding the mochi, make sure you leave a portion above the liquid to save the toasty texture. You want toasty and chewy at the same time.
