Ingredients
Bananas Foster Bagel French Toast (for one)adapted from Paula Deen's recipe
2 whole wheat/oatmeal bagel halves (day old preferrably) ; Paula used croissants! - not a bad idea when you're not watching your calories :)
3/4 C reduced fat milk
1 egg
1/8 t vanilla extract
1 T butter
1/4 C corn syrup
1/2 C authentic maple syrup (trust me it makes a difference!)
1/4 C brown sugar
2-3 ripe bananas, sliced
1/4 C chopped pecans
* rhum extract (optional)
Whisk together in a bowl, the egg, milk and vanilla. Dip each bagel
half until soaked through. It only takes a few seconds. Do not oversoak.
Melt the butter in the pan and brown each side of the bagels. Set aside.
Bring to a boil in a sauce pan: the corn and maple syrups and brown sugar.
When boiling, add the bananas and chopped pecans. You may also add the rhum extract at this point. Bring to a boil and take it off the heat.
Ladle the syrup, bananas and nuts over the bagel french toasts. Indulge!
