How to make Simple Cod
- Preheat your oven to 375°F/190°C.
- Line a casserole dish large enough to comfortably hold your fish with aluminum foil. Cut them if necessary to make them fit, but don't overlap them.
- Place the fish fillet(s) flat side down on the foil.
- Sprinkle the fish with kosher salt to your liking. I used two pinches of salt per pound of fish (4 pinches per kilogram).
- Sprinkle the fish with coarse black pepper to your liking. I used three to four pinches of pepper per pound of fish (6 to 8 pinches per kilogram).
- Quarter a lemon and squeeze out all the juice over the fish.
- Put a pat of butter on each fillet. Don't worry about melting it; the oven will do that for you.
- Bake for approximately 12 minutes per inch of thickness (5 minutes per centimetre of thickness). Check it when it has a couple of minutes to go. As with most fish, when it flakes under slight fork pressure, it's done.
