1 lb/500g Cod Fillets
Kosher(ing) salt
Coarse Black Pepper
1 Lemon
Butter

How to make Simple Cod


  1. Preheat your oven to 375°F/190°C.
  2. Line a casserole dish large enough to comfortably hold your fish with aluminum foil.  Cut them if necessary to make them fit, but don't overlap them.
  3. Place the fish fillet(s) flat side down on the foil.
  4. Sprinkle the fish with kosher salt to your liking.  I used two pinches of salt per pound of fish (4 pinches per kilogram).
  5. Sprinkle the fish with coarse black pepper to your liking.  I used three to four pinches of pepper per pound of fish (6 to 8 pinches per kilogram).
  6. Quarter a lemon and squeeze out all the juice over the fish.
  7. Put a pat of butter on each fillet.  Don't worry about melting it; the oven will do that for you.
  8. Bake for approximately 12 minutes per inch of thickness (5 minutes per centimetre of thickness).  Check it when it has a couple of minutes to go.  As with most fish, when it flakes under slight fork pressure, it's done.

The flavor is not as salty, it seems, as iodized salt. Any suggestions on the proper use of salt; that is, enough to bring out the flavor, but not enough to make it salty?”
