    Instead of baking, fry these "cotolette" in a smallish amount of oil in a nonostick pan. traditional "cotolette" are either veal or pork, but chicken ones are getting more and more popular. They are rarely done with butter, most prefer oil, and never baked. If you opt for baking, remove all fats and just bake in a nonstick pan or over parchment.
