How to make Baked Potato Croquettes
Should mashed potatoes be freshly made, then stir over a low fire and dry, then let cool. Croquettes come out better if made with mashed potatoes from the day before. Anyhow, potatoes must be well mashed into a smooth mixture and cold. Add eggs beaten with grated cheese, flour, parsley, nutmeg and a little salt.Form croquettes from portions of mixture -a round ended cylinder, about 8 cm long and 3 cm in diameter-, working with your hands, dip in egg mixture, roll in bread crumbs, and place slightly apart in a lightly greased baking sheet or very shallow baking pan.Bake in a moderate oven until done, tender inside, crisp and golden outside. Serve inmediately. Makes about 12 croquettes.
