Ingredients

  • 150g spaghetti
  • 1 can whole plum tomatoes (diced)
  • 2 cloves garlic (slivered)
  • tomato puree (about 1tbsp)
  • extra virgin oilve oil (have the bottle handy)
  • a small dash of red wine
  • dried oregano (about 1 tbsp)
  • fresh basil leaves (about 10)
  • parmesan reggiano (a handful)
  • salt and ground black pepper

How to make Simple Pomodoro


My favourite evening snack if I get home late.

  1. Heat a lug of oil in a saucepanpan and fry the garlic gently for about 3 minutes(make sure you don't burn it)
  2. Add the tomatoes, puree, wine and oregano, season and then sweat them (about 10 minutes in total before stage 4. The sauce can cook gently as you cook the pasta. If using fresh pasta, wait a few minutes before cooking it).
  3. Put the pasta on and boil it according to the packet instructions.
  4. 1 minute before the pasta is cooked (taste to check), drain it quickly.
  5. Put all the basil leaves into the largest leaf and roll like a cigar. Chop roughly, once only so as not to bruise the basil. Add to the sauce and stir.
  6. Add the pasta to the sauce. Try to bring some of the starchy water into the sauce as you move the pasta.
  7. Heat the pasta and sauce for a further minute. Then turn off the heat and add most of the parmesan.
  8. Give it a final squirt of e.v. olive oil, mix and serve it in a dish.
  9. Garnish with a little parmesan, some blach pepper and a basil leaf if you have one left.
