Ingredients
- 10 - 12 elder flowers
- 1 lemon
- 1kg of sugar
- 8-9l of water
- 1 tbs of dried leaven

How to make Socata (elder flowers wine)
Even if socata (elder flower drink/wine) is quite a common drink during the month of may when the elder (sambucus) come to flower I only had socata twice until now but each time it was a refreshing experience so I decided to try doing it on my own since no commercial variant exist
- mix 8-9l of water with the flowers, the lemon cut in 16 pieces, lemon juice, sugar and leaven, cover and wait ...
- for 3 - 6 days
- using a wooden spoon mix the ingredients twice a day, taste
- remove the lemon the next day in order to avoid a bitter taste
- it can either become a refreshing, sparkling drink (after 2-3 days) or a refreshing, mild alcoholic drink (after 5-6 days)

len saysThe elder or elderberry based drinks seems quite common (after a google and wikipedia search) but I think they fall in the "forgotten" category. In fact I have the habit of going once a week to a "old style" market. A few weeks ago there was this old lady with the elder flowers. I then remembered having and enjoying this drink sometime ago while visiting the country side and so I found the recipe. The flowers give the aroma, the sugar gets transformed into alcohol and the leaven makes it sparkle.

very interesting.. never heard of this before to be honest.. but a drink made out of flowers seems good to me!
