Ceviche de Gambas Recipe

1kg of Gambas (Shrimp) peeled 5 lemons 1 lime 1 orange 2 tomatoes 1 and a half onion half cup of beer Cilantro Mustard Ketchup Sunflower oil Salt

How to make Ceviche de Gambas
Quick boil the peeled shrimps for 2 min if they are raw, sometimes you buy them already cooked. It's only a quick boil because we want them rare, they will continue cooking in the marinate.
Marinate: In a big bowl add the juice of the lemons, lime and juice of half orange. Peel 1 and a half tomato and 1 onion, pass them though the food processor, cut the remaining half tomato and onion in brunoise (small cubes) and add all to the juice, mix and add a 1 cup of beer, add salt and taste. Add 2 tablespoons of fresh chopped cilantro (reserve some cilantro for garnish).
Add the shrimp, mix, cover the bowl and leave it in the fridge at least for 2 hours, it's better to leave it overnight.
Serving: You can serve the ceviche in soup/cereal bowls, add a tablespoon of sunflower oil to the bottom, then add the ceviche, 1 teaspoon of mustard and 1 teaspoon of ketchup per serving, mix and garnish with a pinch of chopped cilantro.
You can bring a bowl of popcorn to the table and add some popcorn to the ceviche bowl as you eat. You can also have the ceviche with Patacones (Fried Green Plantain) http://www.opensourcefood.com/people/mocodrilo/recipes/patacn-patacones/

The cilantro is the most important part but don´t forget the Sunflower oil at the end, put it on each one bowl. And if when you are makin´the take a lager-beer take a drink and give a drink on the ceviche, this when you have been put it all the things and then take you another drink :D. No to much people do it but is really good make some popcorn and let the people take some on his bowls, is wierd but give a fun taste. Don´t forget the Patacones ;)
