claypot chicken rice Recipe

Ingredients
1 whole chicken-cut between joints1/4 cup sweet dark soy sauce
1 tsp five spice powder (chinese spice)
6 cups water
1 tbsp oyster sauce
1 tbsp sugar
1 cinnamon stick
3 cloves
2 star anise
2 cloves garlic- crushed with skin.
2 slices galangal
2 slices ginger
1 tsp black pepper
2 cups rice-washed-soaked
garnish:
some spring onion-chopped
4 eggs

How to make claypot chicken rice
1. Rub chicken with soy sauce . Heat 3 tbsp oil and fry on high heat just to brown. Saute the garlic in the same oil, then add the rest of ingredients except the rice.
2. Let it boil till chicken is tender.
3. You need 4 clay pots, put 1/2 cup rice in each clay pot. let sit on the fire, pour a cup of broth in the rice and cover for 10 mins. Stir to mix every now and then so it will not stick to the bottom.
4. Then when the rice almost cooked , top with 2 pieces chicken, break an egg and sprinkle some spring onion. cover for a 5 mins and then serve.
