Ingredients
Inside layer of cake:A:
15 egg yolks
6 egg whites
250gm caster sugar
200gm Hong Kong flour -(cake flour)
1 tbsp ovalette- ( cake emusifier)
50 gm cornflour
B:
450 gm butter
4 tbsp condense milk
1 small tin kaya- (egg jam)
C:
red ,green and yellow colours
Outer layer of cake:
A :
10 egg yolks
4 egg white
150gm Hong Kong flour
20gm vanilla ice cream powder
1 tbsp ovalette
1tsp baking powder
50ml ice water
B:
125ml melted butter
chocolate rice
1 small bottle strawberry jam

How to make Fan swiss roll cake
For the inside cake:
1. Cream A till thicken and creamy. leave aside.
2. Cream B till thicken and creamy and add to cream mixture A. Mix well.
3. Divide into 3 parts. Colour it green, red and yellow.
4. Prepare cake tin 8 1/2" x 8 1/2" x 1" . Pour 1/2 of the red batter into tin and spread evenly. Bake using the top heat in the oven (250 C) for 3 mins.
5. Pour the green colour over the red cooked cake , level evenly and return to bake for another 3 mins.
6. Now pour the yellow colour and repeat the process until finish. Cool and cut and arrange them like a fan as shown in the picture.
For the outer layer of cake:
1. cream A till thicken and creamy. Add butter and mix well.
2. Prepare cake tin 9" X 9" X1" with grease-proof paper. pour about 7 tbsp of batter and spread evenly.
3. sprinkle chocolate rice and bake at 250 C for 5 mins.
4. Turn onto a grease- proof paper , spread jam on top. Arrange the fan cutting cakes on top and roll neatly . Leave it seal in a cling wrap to restore the shape. Cool then cut. Store in fridge for longer life span.

marianne49 saysThis cake is easy to make, anyone can do it , Sarawak is famous for its layered fancy cakes. Its a bit sweet but very rich in eggs, because this cake used plenty of eggs!!:P
