Ingredients
Inside cake:A:
10 egg yolks
6 egg whites
200gm caster sugar
150gm gm Hong Kong flour (cake flour)
1 tbsp ovalette
50ml cold water
B:
300gm butter
4 tbsp condense milk
1 pkt coconut cream
for colours; red,yellow,purple
outer cake:
A:
10 egg yolks
4 egg white
150gm Hong Kong flour
150gm caster sugar
1 tbsp ovalette
50ml cold water
B:
125 ml melted butter
blackcurrant jam

How to make Rainbow triangle cake
1. For the inner cake, Cream A till thicken. leave aside.
2. Cream B till light. Add to mixture A.
3. Divide into 4 parts: Colour them green, red, yellow and purple.
4. Prepare a 9"X9"X1" cake tin lined with greased-proof paper. pour about 5 tbsp of green batter in and level it evenly.Bake in a preheated oven of 250 C for 3 mins using just the top heat.
5. repeat with the other colours till finish.
6. cool and cut into triangle.
7. For the outer cake: Cream A till thicken , Add melted butter and stir well. Pour into a greased tray and bake for 3 mins at 250 C.
8. inverted tin onto grease paper and brush top with jam. Arrange cut cakes on top resemble the picture and wrap neatly . Chill before cutting.
