Ingredients

pie pastry
  • 200g flour
  • 1/4 tsp salt
  • 100g butter, diced
  • 40ml cold water

fruit filling
  • 1 apple, peeled, cored and diced
  • 1 pear, peeled, cored and diced
  • 1/2 cup mixed dried fruits
  • juice of 1 orange
  • 1/2 cup white wine
  • 3 tbsp apple cider
  • 3 tbsp sugar
  • 1/4 tsp ground cinnamon

crumble
  • 3 tbsp ground almond
  • 1 tbsp flour
  • 2 tbsp rolled oats
  • 30g butter, diced
  • 1 tbsp caster sugar

How to make mixed fruit pie with almond crumble


  1. To prepare pie pastry:Mix flour with salt. Gently rub butter into the flour with your fingertips until the mixture resembles breadcrumbs. Add just enough water to bring the dough together. Wrap dough in clingwrap and chill in the refrigerator for 20 minutes. Preheat oven to 180C. Flatten the dough into a disc and press it out to line a 9inch pie pan. Blind bake for 20 minutes.
  2. To prepare filling:Mix all the ingredients in a pot and bring to boil. Simmer for about 15 minutes until the fruits are softened and the syrup is thick and viscous. Remove from heat.
  3. To prepare crumble:Mix ground almond, flour and oats together. Rub in butter.
  4. To assemble:Turn oven heat up to 200C. Pack the fruit filling into the baked pie shell. Top with almond crumble and sprinkle sugar over the crumble. Bake for 15 minutes until the crumble is golden.
  5. To serve:Serve the pie warm or hot with a scoop of ice cream or some whipped cream.

Notes: I used a mix of sultanas, cranberries and apricots to make up the half cup dried fruits. I also threw in some chopped cherries I have leftover.
