Ingredients

 

  • 1/2 carrot, cut into chunks
  • 1/2 cup water
  • salt
 
  • 1 tbsp butter
  • 4-5 strips bacon, cut into chunks
  • 1/2 onion, diced
  • 3 cloves garlic, finely chopped
  • 150g white fish fillet, cut into chunks
  • 100g prawns, peeled, deveined, and cut into chunks
  • 50g lump crabmeat or imitation crabmeat, cut into chunks
  • Salt & pepper
  • 3 tbsp brandy
 
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 1 cup milk
  • 2 tbsp chopped parsley
  • Salt & pepper
 
  • 2 large croissants (or other breads)
  • Cheddar and Parmesan (or your choice of cheese)

How to make seafood casserole


To prepare carrots: Bring carrots to boil in lightly salted water, and simmer for 15 minutes until carrots are cooked. Set aside carrots and reserve liquids.

 

To prepare bacon: Heat butter in a skillet. Add bacon and fry until bacon is crispy. Reserve bacon.

 

To prepare seafood: Return pan to heat, sweat onions until aromatic. Add garlic and sauté until fragrant. Add the seafood and season with salt and pepper, frying until the seafood is almost cooked. Deglaze with brandy and remove from heat. Set aside.

 

To prepare béchamel: Melt butter in a saucepan and add the plain flour, mixing well to form a roux. Remove from heat. Mix the milk with the liquid reserved from cooking carrots. Add liquids a little by little to the roux, stirring constantly to form a smooth sauce. Bring the sauce to boil. Add the carrots, bacon, seafood mixture, parsley and mix well. Add more milk if a runny sauce is preferred. Season to taste with salt and pepper.

 

To assemble casserole: Cut 1 1/2 croissants into large chunks and line the bottom of a casserole dish with it. Transfer the contents of the saucepan into the casserole dish. Grate a mixture of parmesan and cheddar over the casserole. Dice the rest of the croissants and spread it over the top of the casserole.


To bake: Preheat oven to 160C and bake the casserole, uncovered, until the cheese has melted and the top layer of bread is golden, about 10 minutes. Remove from heat and cool for 15 minutes before serving.
