Oops I forgot to add that I fried the mushrooms with garlic!
Looks great. I usually do add a bit of cream and a bunch of garlic to my carbonara, but I can certainly appreciate the simpler, more classic version.
If I'm watching my calories, yes, but I also think it tastes sooo good with the nice sauce, so....feel guilty, most of time....no! lol
